Sicilian Style

Pizza on thick dough with mozzarella, smoked sausage and basil.

Ingredients

For the dough:

  • cooking yeast 1.5 teaspoon
  • water 350 ml
  • MAKFA Italian Pizza flour 500 grams
  • salt 2 teaspoon
  • olive oil 1/2 cup

For the filling:

  • mozzarella 100 grams
  • tomato sauce 4 tablespoons
  • 2 or 3 sprigs of basil
  • 15-20 slices of raw smoked sausage
  • parmesan 70 grams

Cooking

  1. Combine flour, salt, yeast, and 2 tablespoons of olive oil in bowl of stand mixer. Whisk a little. Add water and mix on medium speed until it comes together and there is no dry flour left. Increase speed to medium-high and mix until the dough is stretchy and smooth, about 6 minutes.
  2. Pour remaining olive oil into rimmed baking sheet and spread over entire inner surface with hands. Put the dough into 13- by 18-inch rimmed baking sheet and rub top surface with oil until thoroughly coated. Cover with baking sheet with plastic wrap and allow to rise at room temperature until dough has spread out to touch nearly each rim of baking sheet, about 2 hours.
  3. 30 minutes before baking, adjust oven rack to middle position and preheat oven to 280°C. Carefully remove plastic wrap. Using oiled hands push and stretch the dough into the corners of the pan by pressing out from the center and lifting each corner and stretching it beyond the edge of the pan. It should pull back until the pan is just filled with dough. Be gentle in order to maintain the air bubbles in the dough.
  4. Top pizza with the sauce, mozzarella cheese, sausage slices and basil leaves and bake until bottom is crisp and top surface is bubbling, 15 to 20 minutes total. When it’s out of the oven you can sprinkle pizza with parmesan. Then allow it to cool at room temperature for 5 minutes. Ready to serve.
